Pumpkin and Courgette Fritters
(Or whatever vegetable you want to use)
Ingredients
1 egg
½ cup s/r flour
500g of desired vegie grated (I use pumpkin)
+ 2 Zucchini
Salt & pepper
Combine grated veg with flour, egg, salt and pepper
For into patties, fry in medium, hot oil till lightly browned.

I Found this one on Good Food site, from Esther Clark. I love potatoes so this one really appealed to me.
Ingredients
6 Medium potatoes
Olive oil
200g butter, cubed
4 cloves garlic, bashed ( I use crushed)
2 sprigs each rosemary, and thyme
200 ml chicken or vegetable stock
Method
Slice the ends off the potatoes so they lie flat on either side.
Heat the oil in a pan over a medium-low heat. When hot, add the potatoes cut-side down. Fry for 5-7 mins, or until deep golden brown, then flip and fry on the other side. Add the butter to the pan to melt.
Scatter the garlic and herbs around the potatoes and season well. Carefully pour the stock around the veg, being aware of any hot butter that may splash out. Cover and simmer gently for 25-30 mins, or until the potatoes are tender, then serve.

After the Lord Mayor’s Show
It’s funny, but that comment is something I often used to make without ever really thinking about it. Except that it indicated something less than inviting. It came to mind this morning particularly, so I decided to find out where it came from. So here it is.
“From the proverb, ”After the Lord Mayor’s Show comes the dust cart, (earlier notations, donkey cart, sh** cart). Bringing up the rear of the parade was a team to clear the manure left by the pageant’s horses.
Also said of a disappointing or mundane event occurring straight after an exciting, magnificent or happy event.
Which explains why it popped into my head.
Last weekend I house/pet sat for a few days close to the beach, 20 minutes walk away over the sand dunes in a beautiful rural setting. Which was fine as I wasn’t home, instead enjoying glorious weather there.
Arriving home, after missing an official ‘Power Outage’ I discovered that my TV had given up the ghost! – Lovely – NOT!
So I decided to get the remote checked after buying new batteries although I had changed the batteries only a week or two before, which didn’t hold out much hope of a positive result.
A few days of not happy as the only radio I have is the TV channels, I did realise quite quickly that I can actually live without a TV, using my computer for programs that I really want to watch. I have several tasks I could now accomplish instead of just flopping in front of the ‘box’ each evening, where I usually fall asleep before the programmes have finished, J.
Then, yesterday, just as I was rearranging my life tasks, my daughter and son-in-law landed on my doorstep, with a replacement TV for me. It was a spare they said, from their old house, which they were now renting out.
So my life is blessed once more and I am truly grateful. But now with the know
And back to health –
With my new found interest in vegetarian meals, I jumped onto the internet the other day and found several recipes. One of which, Roast Vegetable Lasagne, which I made for my Sunday meal. The roasted vegetables made a huge difference to the flavour and I’m pleased to confess that there is enough left over for two more meals, one of which I will eat today, then freeze the rest for another day.
With the recent rains we’ve had, my planter box garden vegetables have gone crazy! I now have a small green capsicum, with more babies waiting in the wings, or on the stem, baby tomatoes on both plants, broad beans enough to give to friends for a while yet. Even my runner beans are almost good enough to harvest, while the Snow peas are a good size too. I feel a smile stealing across my face every day when I go out to water them all.

Move forward a week or two. New Year this weekend and one of my wonderful granddaughters gave me a book on Cooking for Students. Now I know I’m not a YOUNG student, but as we are always learning something, I can be considered a MATURE student, and I am delighted with the book. Already found several meals I will cook, including one with Potato, carrot and feta cheese patties. Cooking those on the weekend, yum.
